The Best Rice Pizza

Initially this recipe may not seem exciting, but let me assure you it is! Every time I make this pizza, my family or guests gush about how delicious it is. It’s almost embarrassing because the preparation is so simple. Oh, and yes, it is absolutely wheat and gluten free.

I got the recipe from a friend and then tweaked it a bit until I could make it the same every time and count on its quality.

For one pizza crust, you will need:

  • 2 cups of cooked brown rice
  • 2 eggs
  • 1/4 cup your favorite cheese

Mix the brown rice, eggs and cheese in a bowl. Spread on to a non-stick pizza pan.

Bake the pizza at a high temperature (around 400 degrees) for approximately 15 minutes, then switch to broil until golden brown.

Remove pizza crust from oven and assemble pizza sauce and toppings. Throw the pizza back in the oven on broil until cheese is crackling.

Note: The key to a delicious and memorable pizza is NOT adding too many toppings. Overloading a pizza is an amateur move! I speak from experience and from having eaten at some of the best pizza restaurants. Three toppings seems to be the number of choice.
