Delicious Spelt Crepes

In our family, we love crepes, so we decided to make a few adjustments to our Betty Crocker recipe for a healthier crepe alternative. Here’s what we came up with. You won’t be disappointed. In fact, you might even like them more.

  • 11/2 cups spelt flour
  • 1 tbsp agave
  • 1/2 tsp baking powder (heaping)
  • 1/2 tsp salt
  • 2 cups soy or regular milk
  • 2 eggs
  • 1/2 tsp vanilla
  • 2 tbsp butter

Mix wet and dry ingredients and beat with an electric mixer until smooth. Put the burner on medium-high heat. Ladle a portion of batter into a greased frying pan, floating the batter around so it’s covering the entire surface area of the pan. Cook for approximately a minute before flipping. Note: the trick to crepes is to not flip them too soon!

Possible fillings/toppings include: bananas, blueberries, agave, pure maple syrup, yogurt, ricotta cheese, strawberries and vanilla ice cream for something more decadent…and the list goes on.
