Delicious Kale Salad
This kale salad is an absolute favourite in our family. It’s the kind of salad you want to snack on at midnight. Thus you can go to bed guilt free! You can also make it well in advance because the longer it sits, the better it gets.
What you need:
a large bunch of kale
dried cranberries or raisins (try to find the juice sweetened cranberries versus the sugary ones…yes, dried cranberries are sweetened with sugar. Simon was also surprised!)
purple onion
sunflower seeds, walnuts or pine nuts
a lemon
olive oil
agave
optional dash of balsamic vinegar
Chop the kale really fine and throw in a large mixing bowl. Add some purple onion also chopped fine. Then throw in the seeds and dried cranberries. Add some olive oil (to taste) and 3-4 tbsp of agave, a couple squeezes of fresh lemon and an optional dash of balsamic vinegar. The recipe is not exact. Use more or less of any ingredient and tailor to your unique palate. Enjoy.
