Best Veggie Soup
This is a very basic Weight Watcher’s soup recipe that my mother modified. With a simple dallop of curry paste, she transformed this veggie soup into something spicy and delicious. You can eat this soup as a meal or snack and never have to worry about eating enough veggies. The measurements are just guidelines. Feel free to improvise, adding more or less of any vegetable under the sun!
- 2/3 cup sliced carrot
- 1/2 cup diced onion
- 2 garlic cloves, minced
- 3 cups chicken or vegetable broth
- 1 1/2 cups diced green cabbage
- 1/2 green beans
- 1 tbsp Madras curry paste (Patak’s is our brand of choice)
- 1/4 tsp salt
- 1/2 cup zucchini
- 1 can water chestnuts
Saute the carrot, onion and garlic over low heat until softened. Add broth, cabbage, beans, paste and salt. Bring to boil. Lower heat and simmer for 15 minutes or until beans are tender. Stir in zucchini and voila. You will be eating this veggie soup by the bowlfuls and you’re body will love you for it! To your great health!
